Gravity pulls on the balance differently depending on how the watch is held, and a movement regulated only flat can drift seconds a day the moment it goes on a wrist. Position adjustment means measuring and correcting the rate in each orientation, iteratively, sometimes for days per movement.
It is the least glamorous work in the atelier and the most honest description of what you are paying for.
